
Hallmarks of Spanish food, these two dishes are enjoyed all over Spain. Gazpacho, a tomato and cucumber chilled soup, is very popular and easy to make with a blender. Paella, a rice dish, is made with vegetables and a variety of protein. (We will make it with tempeh.) Served with a simple salad, it is a complete meal in itself!
